Amanda, feel free to leave out the mint... or substitute -- basil or Italian Parsley would be great. That being said, I don't think there is a huge amount of mint here ... if he's like my husband, he'd probably not even notice it.

Just made this - minus the mint because I didn't have any - and it's no wonder I constantly come to this site to see what to make for dinner! Like everything else, this is another winner. I loved the lemon flavor...and the freshness. This would be good with some chicken thrown in as well...but it was just perfectly delicious without it. We ate it in bowls with slices of toasted Gemelli bread on our front porch tonight. Yum!

I think I'd be too nervous to use mint as my husband isn't a huge fan. Although he will eat it with feta. Weird. Don't you just LOVE asparagus season? I've been peeling mine into ribbons and tossing it with spaghetti, lemon zest, parm and butter. So good and so easy.
